Diwali laddu

ingredients:
gram flour 1 cup
sugar- 2 cup
pachchai kalpuram -1 pinch
jathikkai- half a pinch
elachi-3 nos
kalkandu-little amount (ur wish)
cooking soda-1 pinch
preparation
take a bowl and make the sugar syrup, the syrup should be litle bit thick.this is very important in laddu making , if this gets wrong then laddu will become a waste.
take a bowl make the gram flour into paste and add add all the items abouve except kalkandu
and heat a dry pan with some oil and put all the poonthi's with laddu spoon and after that put all poonthi's in the sugar syrup and mix it well
then for garnishing fry liitle cashews, dry grapes in the ghee and mix it with the laddu mix and make the laddu balls. thats it

kerala jackfruit appam

ingredients:
rice flour- 1 cup
jackfruit pieces- 1 cup
jaggery- 1 cup
elachi- 2 nos
preparation
First take a bowl, and mix the jackfruit, jaggery, elachi. and take the rice flour in a paste form, the take the jackfruit mix like a small ball and dip it in the rice flour mix and fold it in the banana leaf and keep it in the idly cooker and steam it thats all a healthy jackfuit appam is ready. A very famous dish in kerala.

dassera special

Ingredients
rajma - 1 cup
Masala items
galic - 7 cloves
red chillies -2
small onion - 4 nos
big jeere- 3 pinch

Soak the rajama overnight and cook it the next day. first keep the rajma in the pressure cooker for atleast 10 whistles. then after it got cooked, grind the masala items in the mixie, then put some oil in the dry pan add little mustard seeds,curry leaves, then addthe masala and after that add the rajma and mix it well, add little salt if necessary , so dassera special rajma is ready. It is rich in proteins, good for every body.

Pumpkin halwa

Item required:
half kg white pumpkin.(grated)
250 gms sugar.
ghee 200 gms.
elachi powder-2 tsp.
cashew nuts.-10 nos.

put some ghee in the frying pan and fry the grated pumpkin for 2 minutes then add sugar,elachi powder and mix it and cook this mixture for 5 minutes and add sugar atlast. now serve it hot or chill with chewnuts fried in the ghee.

palak dal

Items required
1. some palak leaves
2.whole pepper-1 tsp
3.jeera-1tsp
4.toordhal - one cup
5.garlic-10 nos.
6.green chilly- 4 nos.
7.tomato-1 no.
8.small onion-5 nos and salt to taste.

cook toor dal and smash it. clean and wash palak leaves and add it to the smashed dal with pepper, jeera, salt half tsp turmeric powder, garlic,chilly, tomato,onion. and keep in the pressure cooker for 1 whistle, that is all , a healthy palak dal is ready, which is child lovable and rich in iron strength.

poppu laddu

fried gram powder-3 cups
sugar powder - 2 cups
elachi powder - 1/2 tea spoons
ghee- 1 cup
cashew nuts - 4 tsp
process:
mix fried gram powder and sugar powder and also add elachi power with cashew nuts fried in ghee, the n add little bit of hot ghee and make it in the form of laddu.
yeah wonderful easy poppu laddu ready.

Mango Kojju

Raw mangoes will be available plenty during April and May seasons.This is a very delicious south Indian dish.
Items Required:
Raw Mangoes: 4 nos
chilli powder: 2 tsp
turmeric powder: half tsp
salt: up to ur taste
oil: 4 tsp
jaggery(yellow):250 gms or up to ur taste.
process:
Take all the mangoes and cut it into straight pieces.Pour oil in the pan and put all the mangoes and add chilli powder and turmeric powder and salt and fry it for 3 minutes in a medium flame. Add little amount of water and add jaggery and cook it for 5 minutes. Then mix it well till it gets gravy consistency.
This item can be taken as side dish for all types of food, also it can be eaten as a separate dish also.
